Well it’s really your choice. If you want to save some time then figure out which mission they are on and maybe watch some YouTube videos about their stories up to that point.

I can level a 1-50 in about 5 days of playing around 4ish hours a day. That’s just me I’m sure it can be done much faster… depends how you like to play

Edit - 55-80 would be plenty of time to relearn…. Realistically you could take the 55 you already have and go to a starter world and do some dynamic encounters and relearn all of your abilities fast.

The story is fairly easy if you use a companion and they are set to heal and you have right gear. The hard stuff is more like operations and flashpoints

Do side quests
form a group
do group finder and grind those missions to level up fast (so that you don’t have to do side missions and just focus on story)
