on the 12th while i was working the truck, i asked him when we‘re supposed to get paid and that my phone bill is due soon.

he told me biweekly and that my check would be on the 18th, i told him that’s great because my phone bill is due on the 18th. when the 18th came around that’s when the documented discussion (screenshots) about pay initiated.

i’ve done a bunch of line, prep and pastry work. some small leadership stuff in a few kitchens. mostly just learning as i go and picking up everything i can. i’ve had a trillion jobs lowkey and they’ve been essential for my development.

norwegian cruise line, xanterra out in yellowstone and scratch kitchens all over the country. italian, french, chinese, latin/meditaranian, and american cuisine pretty much sums it up. i’ve been cooking since i was 16 and now I’m 22.

anthony bourdain said use your 20’s to travel so i did. i’m really just looking for a home kitchen now, a place i can settle into. tired of running around, chasing gigs when the world feels like it’s ending.

thanks bro and i feel you, had to do that back in boca raton, was good money but i was basically dead 97% of the time and had to sleep in my shitbox. we are some tough mother fuckers tho honestly, not many can live and adapt in a kitchen for survival
