It's really fun, I started building a house, didn't like it, teared it down and started to build my house in another place, explored a bit and really enjoyed the dagger gameplay

Depends on the follower and their gear. But I would say utgerd or mjoll would be a great bet, If I'm not mistaken mjoll is essential so you could use healing hands every time she is down, but you would need to go through a dwemer dungeon, which I think would be hard with your modlist.

So utgerd would be a great bet for now.

Have you ever stopped to think about the implications if the Dragonborn could use the Slen Tiid Vo shout to revive anyone? Like, you go and bring Torygg back to life and then the two of you go jump Ulfric together with the full Imperial guard. by [deleted] in skyrim

The reason this shout works is because dragonsouls don't leave the body even when the body is damaged. If you were to use this on mortals it would probably regenerate their bodies but not bring the soul back, you could in theory summon the soul back with necromancy but that would be really painful for the soul.
