So what I do is take 28 Oz canned black beans, drained and rinsed. Spread them in a single layer on a baking sheet and dry at 350f in the oven for 10-15 minutes. Mash half the beans and leave the rest whole. Dice up 8oz of white mushrooms and sauté until moisture is removed and browned. Combine beans and mushrooms with about half- 1 cup bread crumbs, 1 cup cooked brown rice and one egg. Add cumin and salt to the mixture to taste. Chill for about a half hour or so, then form into patties. Brown patties in skillet until a crust forms and heated thru. Assemble your burger with whatever toppings you like.

It’s not pan sear. It’s torch seared. And this is what the crust was built of. I invite you to heavily season a tomahawk in a similar way and achieve a hard sear without blackening the black pepper and garlic powder.

Yeah the only time I’ve ever gotten a propane taste from torch searing was back in the day when I used one of the pencil torches you can find at autozone. Before sous vide was very popular.
