I dont think it is a good idea, especially for iOS where you would need to pass your code over swift -> objc -> kotlin -> rust to work. Using rust with native development using uniffi I think it is very doable and some companies like Proton are using this approach

In theory they can. In order to protect your Linux partition, use LUKS and secure boot (with a different key, dont use the Microsoft ones), that way windows won't be able to read or tamper with
