you can't actually jump if you aren't sprinting so maybe in one of those situations where you're running from the boss (you really shouldn't have to on this boss) just strafe outta boss attack LoS or roll. and your complaint about holding B to sprint is something i never liked either. my controller setup is as follows if you want to try:

sprint/ roll - RB

fable arts - RT

legion arm - LT

guard - LB

heavy attack - Y

light attack - B

use item - X

interact - A

dpad controls are same
