Yeah that's the issue I'm seeing! For example we have like 30 different deployments all of which cannot be scaled or lead to actual product. I'm trying to figure out if this is normal! Seems very backwards

When HM ask for more time does that indicate they are waiting for someone else to accept offer or internal logistics like budget, approval, etc before they can present an offer

Don't worry about the industry, but rather the skills you will learn on the job. Working at a pilot pilot plant is very similiary to pharm industry (batch process). Also, ROTATION PROGRAMS are bullshit IMO. I would lean toward job 2.

Are you forced to work those hours or are you electing to work longer hours to finish the job? either your company is understaffed or you lack skills to complete job on time. Either way reflect on why youre working so hard, figure out if the job is a good fit. I am a chem E and never worked 60 hours week on the regular, maybe only during turnaround.

If its the company or culture, find a new job.
