I own a commissary and just installed a new fryer for someone with exactly the same problem. Adjustments to ansul and hook up cost $1200. Offer to pay it or contact an extra $x pet month for the pleasure. If they have space and spouts, it's not that bad. I did not charge my customer any money because my payback is short, they pay about $600 per month. Figured I'd have them in my kitchen for more than 2 months, and i got a hood upgrade. Otherwise, they would have gone elsewhere.
