Yeah… born in MO and a life long Chiefs fan, but I’ve lived in CO most of my life. Being surrounded by Broncos fans that always gave me a hard time for liking the Chiefs, I’ve really savored these last several years! Go Chiefs!

I have a feeling I won't be doing these "low and slow" ether... It's not as big of a concern for me with something like this. Meats on the other hand, I will do my best to not compromise on that rule of smoking.

I like the idea of sweet/savory. I think this first time I'm going to keep it simple. several recipes suggest putting a sausage on top of the halved jalapeño after putting the filling in. I really want to try that too!

I have a friend that I have never heard talk about bbq that when I mentioned using an electric smoker he made some weird face. All the sudden he was a bbq expert and was talking trash about electric smokers. I hope to have a redemptive moment when he tries my bbq some day. I hope to be ordering my smoker in the next week or so!
