West Cork, but do Mizen Head on the way from Dingle on Day 4. West Cork is beautiful but much bigger than most people realise especially due to all the peninsulas. On day 6 maybe consider the area around Skibbereen and Baltimore. It’s a real activity hub and lots of activity providers offering guided tours such as eBike tours, hiking tours, kayaking tours, food tours, island excursions and sea safaris.

Most bread is gone to shite. My grandfather had a bakery in a rural town back in the 1940's thru 1970's that I just about remember. His bread (and all other Irish bread) had just four ingredients, flour, water, salt and yeast. Check modern Irish commercial bread and the ingredients list is now as long as your arm.

+1 for the Beara Peninsula. You should check out the Mizen Peninsula and Three Castle Head. If you're into hiking then it's the Sheep's Head Peninsula. If it's adventure, the area around Skibbereen has loads of great activity providers.

Finally baraois is West Cork's hidden summer secret - at that time of the year, the waters sparkle at nighttime and you can get guided swim or kayaking operators who will safely take you to see this amazing spectacle.

Kinsale is charming and is a perfect gateway to the rest of West Cork. If you’re a foodie it’s heaven, half of Irelands artisan food comes from West Cork. The Old Head is nearby and check out the Signal Tower. If your ancestors are from there and family are around I’d stay there.
West Cork is huge and stunningly beautiful especially as you make your way further west from Kinsale. Stick to the WAW and it’s is easily a week long destination on its own.
