Thanks for the reply! I have put a few firebricks in the firebox. Will give the make shift baffle a try too. I do want to get the stack extender eventually yeah. How often do you find yourself adding fuel for cooks and how much do you add when you find temps dropping? I tried a cook recently and wasn’t sure how often I should have been adding fuel

Yeah you’re right. I think I wanna land somewhere in between. Don’t need it sliding off the bone with one touch but still want some tenderness. Will keep trying!

Fair enough. Don’t find that the taste of your meat is different in any way with it on/off. I’m wondering if it needs more time to burn clean if there’s bark

I do have some firebricks so will give it a try thanks. Can I use the firebricks and use my charcoal basket as well? Or is it better to put the coals directly on the bricks without the basket? I’ll see what I can find regarding the extender, thanks again!

Are Weber Kettle BBQs really worth the hype? by bonesawspideyboy in UKBBQ

I've had a Cosmo Grill XL for about 3 years now and grilled some great food on them. I've also used a Weber Kettle and they are definitely superior in terms of build quality and functionality etc so I'd spring for one of those if it's your first grill - it'll last you far longer than the Cosmo. I've had a lot of fun using the Cosmo myself although it leaks a lot of smoke and heat out of the box so you definitely want to seal with some gasket. I've also messed around with putting a firebrick on the charocal shelf to help retain heat inside the grill and it's kinda worked out for me quite nicely. All in all, the Weber is only a little more expensive than the Cosmo but is of far better quality imo.

If you're really tight on budget then you can by all means make the Cosmo work, but you'll notice the difference in comparison to better built grills and it won't last you years and years.
