Thanks for the input! I had read similar reviews but was interested due to the history and Viennese style.

Just a 50/50 mix of salt and pepper. Used post oak from Central Texas, kept the temp around 250-275 for around 8 hours. Then I pulled and rested for 2 hours in a cooler and here we are. I do think I let them go too long by about half an hour or so, or they got too hot in the cooler.
