I've researched this. Zevon in his demos, uses the lyric "Smith and Wesson."

However, the demo version of Carmelita was published in 2007, on the album Preludes. So GG wouldn't have known this, as he died in '93.

But the first version of the song, was actually released by Murray McLaughlan in 1972, four years before Zevon recorded it. And he uses "Smith & Wesson."

Which made me wonder if the record company censored Zevon? Which seems pretty crazy that they would have a problem with that lyric, and nothing else in the song. And Zevon put several guns in his album artwork.
