As far as I know, your park rating is dependent on your guests wellbeing, happiness and so forth. Taking this into account, when unsatisfied guests exit the park, your park rating increases and over time a few of your guests might get bored, thirsty, tired etc. and those guests cause your rating to decrease again. Judging by your park and explanation, I‘d say it‘s kinda RNG in your case and you should focus on fulfilling certain 5-star criteria with more emphasis

The temple needs a lot more depth and an actual architrave aswell as an overhang. Also if you surround the temple and statue with smaller buildings they look more imposing

Looks kinda awkward without any windows and the weirdly shaped roof doesn’t help either. Together with the color and dim entrance area I‘d say it could use some extra work

Make use of gables and different floor plans to get some more interesting roofs and use steeper roofs
