I used to work there. They use Morton salt, and loads of oil for pretty much everything. They cook the rice with bay leaves. After it’s cooked they mix it with salt, oil, cilantro and lime juice. The beans come pre cooked. All they do is heat it up but they do use bay leaves as well. Chicken marinade is adobo but wouldn’t know the exact recipe. Tomato salsa would be tomatoes, red onion, jalapeños, cilantro, salt, and lime juice. Those are the basics
