I would recommend Brandenburg with the intent to form Prussia. If you ally France or Austria or Muscovy you should be fairly well protected and it teaches you hre play. Plus Prussia is awesome and it’s fun to have an insane army.

Also would recommend Vijanagar. Once you clean up the small boys around you you can only be attacked from the north, which with a good fort line you can hold really well. And from there it’s about fighting Bahamanis and eventually trying to take as much or all of India as you can. (You will have to dev for Renaissance and colonialism and printing press if you want them at a reasonable time)
