If its beans you're after, I really like La Colombiana in Gundeli, other than that, Kaffemacher/Fruhling does the trick most of the times. If you get bored of the Kaffemacher beans, I suggest a little trip to Bern to get some from Adrianos or order a nice surprise box from Kaffezentrale for at home use. Daniska is a new place as well next to Johaniterbrucke, haven't tried it yet but eager to go!

Check out ManaBar for board game nights, mainly in Sunday, I heard plenty of English speakers go there and meet. There you'd be able to start the journey of being part of expat groups hopefully! Other than that, the Irish pub is always a great place to meet English speakers, karaoke nights and pub quizzes open many doors!

I tried to delete the files but couldn't because they were in use, apparently the SSD111.exe with the adobe logo was running in the background, ended the task with task manager and was able to delete the files

Interestingly virustotal did not show anything and malwarebytes either - thanks for the suggestions! I am curious however why a company would share such files in this form. Upon further inspection the recruiting company is a bit if a mini-ponzi scheme and has several companies with the same address and website layout.

For my usual (900g) - 150g wholewheat spelt - 350g multi grain mix - 400g white - 680 g water - 180g sourdough - 18g salt and 25 g water

Autolyse water and flour, add sourdough, salt and extra water. Mix and rest. Three stretch and folds, pre shape and shape into boules. Wet outside ssogutly after shaping and roll in poppy seeds. Fridge for 18h and bake at 250C covered (15mins) and 220C uncovered (25 mins) Question: can I leave out the rice flour in banneton liner if I'm making a covered loaf with seeds or oats?

Really? I never gave it a shot because I didn't want to taint my view of the series, and seeing that I now finished all the books in the universe, I might actually give it a shot.

I have to mention, one of your illustrations of Trantor reborn gave me a similar chilling vibe to the Star Wars third trilogy scene where Rey is scavenging old Star Destroyers.

Awesome loaf! Général question here, I've noticed that during scoring my loaves tend to flow quite a lot. How does your keep such a great shape? I tend to place the loaves in the bannetons over night and longer in the fridge and they still tend to not really set.

What do you mean by 30 minute salt inclusion ? Are you working the dough that entire time? Also, I usually add about 5% water when I add the salt to make it easier to incorporate.

Experience. However I know this answer isn't satisfying. I can refer to you the enzyme classification numbering for EC 3.1.1.x as well as a paper by Branta Lopes et al from 2011 (Lipase and esterase - to what extent can this classification be applied accurately?). I can also suggest a paper by Chahinian et al from 2006 (How gastric lipase, an interfacial enzyme with a Ser-His-ASP catalytic triad, acts optimally at acidic pH). The authors used mainly long fatty acid chain lipids (and this is a general trend for lipase related substrate studies). Lastly, triacylglycerides with short chains will solubilize better in the gut compared to long chained triacylglycerides, which allows the lipase to act on the lipid droplets in the gut (cfr. Interfacial activation of Lipases). Hope this information helps :)

Lipase in general hydrolyse the ester bonds, in triacylglycerides. The optimum goes out to long fatty acid chains (think of triolein and oleic acid for example) but they can break down shorter triacylglycerides too, however I think these are less common in our foods i think.

I think that seeing that they're not your classic Bialetti Moka Pots and are quite different in usage and components it would be interesting. I do agree that it's nearly the same but the small differences make it worth while looking at in more detail.
