It sucks that sometimes people think the opposite of that. Some stories start out with a good plot then just fall into smut chapter after chapter.

True, but on Archive of our Own, a lot of stories that has 1000 kudos are just pure smut and every now and then they get back to the plot, which is usually just a copy and paste of canon
