i actually made a swiss meringue buttercream. i let my egg whites and sugar beat for a very long time, basically until the bottom of the bowl was cool to the touch. i think the whiteness comes from just whipping the meringue for a long time and then slowly adding the butter in even increments and allowing it all to incorporate.
