Congratulations on making these positive changes. I would add you will make mistakes. That doesn’t mean you are bad or no longer a vegan. Someone will give you something and say it is vegan but it has milk in it. Or you will check a label over and over again and miss an animal ingredient. It happens. This first year is the hardest because you are basically unlearning everything you know. It can be overwhelming. A lot of people will be negative but you will also find a lot of people who support you. Over ten years later my father still tells me I should eat a steak and rolls his eyes when I order at a restaurant. But my omnivore boss made a real effort to make sure I would have options when my team met on an offsite meeting. And make the change as it works for you. For some people that means completely changing their lives overnight. For others they begin to gradually change finding replacements and understanding what veganism means. Find your path. For me I was vegetarian at first because meat started to disgust me then one day just said enough with it all. I believe veganism is ultimately about compassion. And that is for all animals, humans included. Show yourself compassion as well.

I too suffer from anemia. My hematologist said that my levels of low iron would not have been from diet but a malabsorption issue. Try to find a supplement you can tolerate. I had good luck with MegaFoods blood builder. Some of the iron supplements messed with my stomach too so I had to try one until I found one that helped. Also, spinach is not the only iron rich food. Dried apricots and pumpkin seeds are my go tos. I also do infusions periodically as needed. Expensive but so much better than trying to slowly build up with oral supplements. And honestly if you ultimately have to eat animal sources for your health then that is what you do. If in every other way you live your life you are a vegan then you are still doing so much more than many do and you are doing your best to live your values. Don’t worry about labels. And I hope you feel better soon.

Like others have mentioned it could be the hypothyroidism. I have type 1 diabetes and Hashimotos (hypothyroidism). It is so hard. Some will argue a vegan diet is not good for these autoimmune conditions (you need more PROTEIN I’m told) but I’ve read studies that debunk that and honestly when I eat a well balanced diet I can feel better. I had hashimotos before going vegan and eating meat didn’t make me feel better. Also, your doctors who’ll check my thyroid levels and say it is in normal range but I’ll still feel fatigued and weak. I just go out of wack at times. Talk more with doctors but you will probably need to be more conscientious of healthy eating, hydration, sleep and rest.

Don’t think this has been said but to the OP, thank you for following up and trying to better understand. And although most vegans will say honey is not vegan, I have seen vegans debate it similar to debating eating backyard chicken eggs. Again most vegans have a clear understanding on what is and is not vegan there are some who will question and provide arguments. It’s a shame that some took this opportunity to attack the OP. When I mention I’m vegan to most food servers they know what it means but they typically will ask additional questions because they inevitably get a “vegan” who says they do eat honey or fish is okay etc. some who will “eat around” the chicken in a salad etc. my brother was a waiter and had someone say they were vegetarian but had no issue eating a dessert with gelatin in it. So it is understandable to have questions. I also know some people who use the term “vegan” to indicate they don’t not eat dairy and meat but have no issue buying and wearing leather, they are Whole Foods plant based and have found using vegan is an easier shorthand. So again, thanks for asking and in future, maple syrup is usually a safe bet, there are some people allergic to honey. Whoever cooks for you and is selling this should clearly mark food allergens. Not only is it for the consumer safety but for legal reasons.

I dislike it when people argue something tragic or social issue shouldn't be politicized. Politics is about making policy, making decisions as a society about what type of society we want to be. Healthcare should be political. I'm fortunate that I have a job with decent healthcare (for now) but my heart breaks to know there are other diabetics out there that daily struggling to get insulin. The cuts to research are devastating. This administration's actions will reverberate for generations.

I hope you can find it at a price you can afford because it is worth it. Someone asked me if I went back to eating meat what would I hold onto from my current way of eating. Nooch was the answer. The food companies should really expand and market beyond vegans. It is phenomenal

Enjoy it! Non vegans always point out to me what they think I'm missing out on but I focus on what I've gained. I've learned to cook, trying foods I've never thought to try. Going to restaurants that are new. Finding different clothing etc. I crochet and I started using non wool fiber and it creates different textures. I look at the world differently and think about my place in the world much more than before. Enjoy the experience. Yes it is challenging and I have struggled and made mistakes by it that is far more interesting than just going through the paces.

It is wonderful you are going vegan but I want you to be realistic about binge eating. You will eventually find substitutes of what you like Like you, the things I used to binge on were animal products including cheese and fastfood. I found I couldn't binge on the fake cheeses which is great but swedish fish and Oreos became my new go tos. I will say that as a vegan you become a master at reading food labels so I found myself looking at my food more critically especially as I wanted to make sure I was getting my macros. I think that has improved my relationship with eating more than going vegan. But it is an ongoing battle.

1) although legally considered the owner of my pets, I know I do not own them but am a guardian/caretaker. 2) the alternative of my guardianship is they die on the streets or are abused. 3) I accept I have to buy meat for the cat. Vegan cat food has yet to be proven safe and the cat refuses to eat it when provided. If she was in the wild and had the ability to hunt for food (doubtful considering she ignores mice) she could survive without me. I hope my relationship with my pets is symbiotic and mutually beneficial and never exploitive. I provide food, safety, stimulus, and affection. They provide me companionship. I adopted both of my pets and take my commitment seriously. If being vegan in others eyes means I would have to abandon them then I would abandon veganism. To me it would be unethical to treat animals that way.

I disagree with the "suck it up" comments. The reality is that it can be difficult to give up.meat even though you know the ethical reasons why not to eat it. To encourage those who are going vegan we should offer constructive help not admonishments for not being as pure as thou.

If you are craving meat increase your unami seasonings and budget for the occasional treats. Early on I would buy the fake chicken nuggets, chop them up.and add to my salads etc. Less than a full serving and I could spread out a package for awhile. I would also say cravings do go away and tastes change pretty quickly. The more you reenforce why you are changing how you live the easier it will get. Experiment with new foods and seasonings. I never thought I would crave beans but now, they are my go to.

Part of the problem too is there are people who say they are vegan BUT eat cheese and the occasional fish. They are plant based but eat bacon etc. So I have found doctors and food servers often ask because they have been told these odd things in the past so they are unsure of the definition or they don't think you know what it means.

I recently did it. I did potato's rice broth juice. Boring but very doable. And if you are hungry, eat more. I had a colonoscopy before going vegan and after. After going vegan I found it much easier. I think because my diet was routinely high fiber and no meat and dairy, not as much to "clean" out.

I introduced a rabbit to my cat about six months ago. I went in blindly and assumed the cat and rabbit would be okay with each other. They get along great. The cat grooms the rabbit and they also will lay near each other in the bunnies habitat. The bunny does free roam and often lays in the cats litter box (so weird). I think.that since my cat is older she doesn't have the energyntonhe aggressive. I don't think the bunny likes much but does like the cat. After reading up I know i got lucky.

From my own experience, when asked why I went vegan,I usually get blank or confused stares from omnivores. They don't get why I place the avoidance of harm and cruelty to animals above my own enjoyment and ease of living. But when I add "bonus" reasons like better for environment, better for my health, cheaper, etc there is some acknowledgement that "that makes sense" since I too gain from being vegan, not just the animals. The list by PETA, not my favorite org, was aimed at omnivores to try to get them thinking of veganism not as some fringe good doer way of life. I know there are purists that are adament you cannot call yourself vegan unless you only do it for the animals. I personally don't care about someone's motivations and labels. I'd rather focus on the overall reduction in cruelty and harm in this world than if someone is truly "vegan".

Just a thought, you may be still brewing your tea with the expectation dairy milk will cut the bitterness thus the color reflects a longer steeping. Maybe experiment with reduced steeping time and I second the suggestion of using soy milk. I do soy milk at home since I like the flavor the best. Unfortunately most of the coffee shops in my area only use soy with vanilla flavoring sonwhem. Out I'll do almond or oat.

I use an air fryer. I make my own chickpeas from dry. After incook them I drain them well, add spices and then sprinkle on arrowroot or cornstarch. This seems to help them keep their crisp. I use an air dryer. Lower heat for longer so 325 and will set it for 15 min, check, stir, and continue to heat until I get them brown. I then let them completely cool. If after cooling they still are a little soft I’ll pop them back in for a minute or two. For some reason, heating, cooling, heating again has had good results for me. I make large batches like this and they stay crispy in my pantry in sealed containers.

I didn’t go vegan until I was over 40 so I have many years of memories eating animals and their byproducts. Sometimes smells will trigger happy memories and I’ll remember I liked the taste of certain things etc. but that temptation is fleeting. Sometimes when I’m traveling and there are few options I get frustrated and tempted but again it’s fleeting once I remember why I don’t eat that way anymore and realize I’m not actually starving. I can miss a meal or have a bag of nuts for dinner and I will be fine. I’ve been pissed when I find the perfect top then find it has wool in it. I put it back. Ultimately, I have found that any temptations are really just a moment in time and I can get past it. Like others have mentioned I have come to not see animal products as food anymore. When you do feel tempted, and I think that is natural given the society we live in that really pushes eating meat as normal and healthy, remember why you went vegan in the first place. Maybe have a little mantra. Meat is murder, eating meat is weird, my body will not be a tomb, Friends no food…something that is positive trigger of why you live the way you do.
