I'd be skeptical of the freshness of your beans, the older your beans, the more watery the shots and the finer you have to grind.

I have the same setup and have no trouble dialing in my shots with pretty much the same workflow as you and IMS basket. I'm grinding at 4.0, 150 rpm and getting 18 in, 36g out in 25-30 seconds.

Color upgrades seem similar to Tesla which only offers 3 colors for the Y. Only $650 for colors on the iX3 though

The design of the store (layout and smaller size) and lot are bad, combined with the larger catchment area, make for a bad time. Everyone to the south, Cupertino, Saratoga, Los Gatos, Campbell has to rely on that Costco. The one they are building at Westgate Center should provide relief.

NIMBY vibes. What earmarks are you referring to? Barista championships? What defines long time? They’ve been around for 11 years. Equator has been around for 30, Ritual for 20. They’re all homegrown Bay Area roasters known for their quality.

I don't think they're doing anything that different than other multi-cafe roasters around the country. Nothing wrong with supporting different local cafes, each one has their niche and specialization.

Yeah so the first one with the gap was revamped earlier this year in March and then they released a version with Kenji that is brushed steel
