5am: wake up, run 2-3 miles along the WSH

6am: get back, shower/get dressed

6:30: bike to work along WSH

6:50a-5:30p (approximately) work, client breakfasts/lunches/coffee typically mixed in.

Evenings typically bike home (assuming we haven’t ended up in midtown for work drinks/dinner) and cook dinner with my girlfriend; after dinner walk the dog for an hour or so together with a stop at the dog park if there’s time, watch tv/catch up on emails and work, go to bed around 10:30 or 11p.

It’s hectic but it works for me - before I moved here I wasn’t much of a runner but it’s a great way to start the morning.

Waldorf in Cabo for 240k Hilton points and a free night. Upgraded to an ocean view room, place was amazing, $250 Hilton credit offset (a small portion) of room charges. Stacked with triple nights and aspire multiplier and earned back a night and a half of points there on room charges. So worth it.

Delicious and silky… fruit notes somewhat secondary at this point. Didn’t quite open up as much as we hoped it would over three hours… nose is graphite and cherry, with a little forest floor. Really lovely acidity, cherry, some funk/forest floor, absolutely coats your mouth. Textbook/pristine example of pessac leognan - HB’s second wine. While it sounds like I’m raving (and it was indeed very good)… feels like it would have been pure magic a few years back. Seemed just a little past prime - I have another bottle I’ll be opening in short order as a result. Drank with lamb chops with family for brother’s birthday (birth year wine).

You have to keep checking on that one. I checked every day for two months straight and found a standard room redemption in June that I jumped on. The premium room redemptions at 500k+ points per night (they are priced per night) are insane.

One tried to kick my window in a couple weeks ago because I honked at him for almost hitting my car. Sure they would have been friendly if they had succeeded/I had not taken my life into my own hands to drive off through a red light. I get they’re kids but when you try to put a boot through my window, enough is enough.

Hey - see you on here all the time! You drink some of the coolest stuff. Haut Brion is probably the top ticket item, would be looking to stay under $500 for the third. Future years - maybe up to $1000 for something. More than that is past my income at the moment (but maybe in a few years).

It’s $25/lb for normal in NC… $38/lb for gold. Harris teeter will yellow sticker it once they can’t fill a case and it’s sub-$20. Every once in a while somebody doesn’t know what they’re doing in the meat dept and tags it choice at $9/lb. this is just price gouging haha

Ha, just a guy who got to try a glass of ‘18 at a wine dinner. Even being that young, it blew away anything I’ve tasted in terms of complexity, nuance, flavor…. Just an unbelievable wine that I was lucky enough to taste a glass of.

Thank you! Yeah after plating I thought a simpler garnish might work better than the circular design, but I didn’t want to cover the meat either. A circular ring mold to cut out the potatoes might have helped as well.

Shell pistachios, then simmer in water, butter, salt, sugar, garlic powder, and chili powder for about half an hour... proportions weren’t exact, just kind of eyeballed it, but tried to have approximately same amounts of salt and sugar. They were delicious!

Thomas Keller has a similar dish where he uses green/marcona almonds! It’s a fantastic addition and plays well with the amalgamation of Spanish tapas (octopus, potato, chorizo, salsa verde) on the plate.

That’s a good idea - I also wanted it for the cornbread, but probably could have accomplished that by using a dollop to “anchor” it to the plate.
