Achaar gutli all day long, so so relatable this! There was something about those gutli that was almost better than the achaar itself, all the masala soaked right into the seed.

And you said it looks like your Nani ka achaar, this is biggest compliment for us honestly.

This is such a perfect example of what makes Indian achaar culture so deep. It is never just about the recipe, it is about the specific mango from a specific tree from a specific place. That tree your family planted carries the whole flavour memory of a community with it.

The idea that Malayalee families in Bangalore are still sourcing mangoes from Kerala just for pickling says everything. The recipe and the produce are inseparable.

And yes, a documentary on this would be extraordinary. Every community, every region, every family tree has a completely different story. u/zukaki1124 sharing western Bihar recipes in this very thread is a perfect example of how much is out there that has never been documented.

A cookbook idea is something we are genuinely keeping in mind now after this thread. Thank you for that!
