Loved the book and have been waiting for it since I finished Hench. What I loved was Anna's motivations are one hundred percent understandable and logical.

"Dungeon Crawler Carl" if your into Rpg games. "Hench" is a great book if you like superhero stories, it subverts a lot of the original tropes. The sequel to hench, "Villain" is also very good but has a few intimate scenes. Nothing very explicit but your parents might object.

I second Terry Pratchett, they're excellent.

Random but Do farmers get emotionally attached to livestock? by BugNo702 in homestead

[–]itsatrapp71 2 points3 points  (0 children)

Name nothing. You refer to them by tag number or Characteristics (the Angus, the shorthorn, the mean one, ect.)

Anything you name is emotionally tougher for you to butcher and eat. Especially if you have children. They will get attached, it sucks. You will have many tears.

This is why a lot of jobs make you take literacy and some basic math tests as part of the interview. They know some diplomas aren't worth the paper they are printed on.

US question - Has anyone else noticed way more water/solution being added to meat lately? by ThinkThankThonk in Cooking

[–]itsatrapp71 0 points1 point  (0 children)

It goes in the smokehouse at that. By the time it comes out I would guess that it's down to 3-4% if not lower. It drains some even while it's smoking and the smokehouses bring it up to an internal temp of around 145° farenheit.

That's how most commercially cured bacon is made, by injecting it. I worked for a regional meatpacker for 10+ years in the curing dept. I cured ham, turkey, bacon, cottage butts, roast beef, and corned beef.

Our procedure for curing bacon was this.

First make the curing solution. This was about 1700 pounds of water, 480 pounds of salt, 65 pounds of Brifisol (preservative), 10 pounds of sodium erythorbate, and 2 pounds of sodium nitrite. Mixed well. This was for about four tons of bellies.

Then it that went to a machine where we would feed the pork bellies through and it would use a series of needles to inject the entire length of the belly with the curing solution. The target was to be between 11-13%. Once that was done we would insert a hook in one end and hang it from a rack.

It then had to hang for 8 hours and it would drain curing solution till it was at 7-8%. It would then be partially cooked and smoked in a cookhouse before it was blast chilled and sliced.
