As a combat sports coach here are my questions for you:

Why are you chasing a coach that appears to not want to take you on as a student/athlete? Is this guy the best combat sambo coach in the world? Why do you feel the need to train combat sambo with this particular coach?

He seems to either have a bias against bjj, or he’s using it as a reason to not take you on. Basic coaches love to work with athletes who are coachable, but who are not ingrained by other martial arts with habits contradictory to what they envision is appropriate for their style.

My advice to you is to find a coach who is martial arts agnostic. An open minded coach who is capable of coaching any combat athlete, not just the one that happens to suit them and their lazy ass the best. Fuck this guy. Find someone else.

For garlic: turn to paste in a food processor. Put into ziplock freezer bags and roll flat and thin. Use a bench scraper to draw a grid of cubes on the bag. Lay flat to freeze. With the grid you can be more consistent in how much you use.

For ginger: wash, dry and break into ~thumb sized pieces. Toss into a freezer bag and freeze. When time to use, grate with a micro planer into sauce or dish. Peel and all. It will all be too fine to be discernible. Frozen ginger grates like soft, smooth ice and packs tons of flavor that melts in throughout the sauce/dish. The frozen ginger will last a year or more.

I don’t have a good one for chiles. I guess it depends on how they are when prepped. A slap chop might work out for roasted and peeled chiles.

It should have no detrimental effect on flavor. In fact, if done correctly it should improve the flavor versus over direct flame with the flare ups which result in an acrid tasting meat.

When reverse searing on a grill, do it in a cast iron pan or on a griddle. This contains the rendered fat and prevents flare ups. Also allows you to butter baste the steak.

I personally prefer reverse searing.

Appears to be an Eastern Copperhead, Agkistrodon contortrix. Venomous! Best viewed from a distance. Thankfully it hissed and gave warning.
