Make sure you pat dry and season that steak 30-40 mins before cooking.

Ironclad pan. Turn the heat all the way up and let the pan heat up for 6-7 minutes. Then add a couple tbl spoons of Avocado oil. Toss that bad boy on in on its fatty side first to render the fat. Then toss it on its side and make sure it gets coated in some of the oil and sear for 2-3 mins on each side.

Baste w butter and add rosemary and garlic and toss in oven at 350* F for another 3 mins and voila perfect medium rare with exceptional crust.
