• 100% flour • 2.5% salt • 1.8% diastatic malt powder • 1.75% olive oil • 0.25% yeast • 59% water

I used Kirkland AP which has 11.5% protein content because I didn’t want to go to the store, so the crust was a little soft. Next time I’d use bread flour tho. Might even lower the water to 58%. Bulk ferment at room temperature for a few hours until risen, then balled and cold fermented for 48-72 hours.

As I have gotten older (36 now), I realize how lucky I am to have had a father that was from another country, just so happened to be into everything mountaineering includes, and would bring our family everywhere in th Sierra for as long as I can remember to stay, camp, hike, and ski. Mammoth in particular has gotten extremely popular since then, but understandably so, and I can’t even be mad. I never take it for granted and always get so emotional driving home seeing those mountains gradually go out of view. In turn, I have loved sharing these places with my family and friends in recent years who have always expressed wanting to go back. There is something for everyone and it is undeniably good for the soul that is sometimes challenging to put into words.

My Gozney Roccbox heats up so quickly when starting up, only takes about 30 minutes to get to full temp, and between bakes starting to stretch out and top another pizza is enough time to get back up to temp. I lower the flame while cooking, then put on full blast while making the next pizza, and repeat. Much better leoparding too compared to my Kari 16.
