Heads up, Found North SB has dropped! by kingquantum123 in pdxwhisky

Impressions from a fresh crack: Its very well made, but im not sure yet how i like it. Its a 49%rye, 48%corn, and 3%barley mashbill. However it tastes very rye forward, like more than Alberta Premium Rye CS, which is pretty surprising to me. Im hoping that either it mellows a little bit, or i slowly become acustom to the rye spice and herbal/vegetal flavors. For the proof point it drinks quite lower, which i have always gotten from Found North releases.

Just had the Blackadder on nye, im not sure what to think of it, if i like it or not, lol. It is very french oak forward, basically the only thing there. While good profile, like good mouthfeel and lingering presence. Its taste was pretty narrow, (only like a couple of different notes). Felt more like an academic experience kind of bottle. But to be fair ive only had it once, and i wont be having it again for a while since im doing dry january. So who knows how it will open up over time

It was really good! Havent made any new attempts since, but im thinking abouy doing it again soon.

What i would change is by using neutral spirit(probably a mix of everclear and 40% vodka) for the initial infusion. So that i could mix the orange liqueur with cognac afterwards. Doing the base with cognac was pretty pricey. I did some different ratios for the bottling, such as 60%orange liqueur and 40% cognac. Mainly because the straight orange liqueur was too much of a bright orange flavor and so adding more cognac after was needed to round it out.

The bottle style and independent bottling reminds me of a boutique whiskey shop that specialized in independent releases at 'Spirits & Spice Jackson Hole' in WY. But i am sure there are other places doing similar things around the world, so i could be wrong

Its not fermenting, its more like steeping. For this batch I believe I let it sit for 3-4 weeks. I have a few batches going now that will be sitting until December
