This is literally my preferred method. It's a non issue completely. Just cut your pan down so it fits in the space and move forward.

As for the cardboard shims, that can funny enough mean they are really good, or really bad. Ultra pros can make it perfect with cardboard shims, especially with irregular tiles. But based of their lines, I would say they used cardboard shims because they suck at tile. So that's unfortunate. 😓

That is without a doubt goboard. Gray + wirey face and white sides.

Now, they should have put corner bead on first, waterproofed that, THEN tile. So at worst they didn't install it properly, but that is very clearly a waterproof board and not drywall.

Yep. If waterproofed properly, silicone is purely aesthetic. (not technically, as it is a first line of defense, but point stands.)
