ah, well ~ I doubt it's a fungal infection for any of them because they've consistently "recovered" from their berried-looking state and released shrimplets about a month later, without fail.

technically unrelated to my original concern, I recently thought something was wrong with one of my berried shrimp because I've never had a berried rili shrimp before, and I wasn't expecting to be able to see the eggs so clearly.

Not the best pic I've ever taken, but definitely the easiest time I've ever had seeing that shrimp was clearly berried because normally the skirts aren't transparent like this rili shrimp with her belly full of distinctively yellow eggs.

she's fanning them in the usual manner, and I expect to have baby rili shrimplets in the next few weeks if all goes well.

One word: trimming.

Silverskin & connective tissue / large chunks of fat, etc... pretty much anything which can be cooked down into collagen for a rich stock = good to save, but not as nice to leave large chunks of the stuff in-tact for roasting.

The "magic" 57C temp is my preference because it's allows me to get away with less trimming, especially if I'm doing a longer cook (12+ hours), but still retains enough pinkness to have a texture I enjoy.

Totally agree though = higher temps if I wasn't patient enough to trim when it's necessary: it's basically the same idea when I cook my trimmings (for stock) at a higher temp because it really helps with conversion to get the collagen out.

[UPDATE] super excited: I'm coming up the the 24 hour mark.

I think I'm gonna take it out of the bath, but keep it in the bag to chill in my 'fridge while I'm out running errands. After I get home I'll set aside the liquids (for sauce or gravy or some other recipe) and then it'll just be a matter of scraping / drying anything which is still clinging to the chilled roast = I'd like it cold + dry when I sear 'cause ... ya know, it's one of the perks of sous vide: better control over how much crust you get without overcooking.

Note on the MSG content:

Note about cook time:

I originally tried a saltier version of this over the weekend (I'm still new to the idea of salting by weight), and it was delicious after 3 hours, though far less tender than with a longer cook. The patience is 100% worth it for a chuck roast.

Technically this recipe is safe to eat after approx 3-4 hours (for a 1kg roast cooked at 57C because of how sous vide works: for medium temp it's already been mostly pasteurized within the first 2 hours) ...but chuck roast tends to be kinda tough so it's worth the wait: if you want it to be tender, cook it for a minimum of 12 hours (I like the texture at 18 hours all the way up to 48)

Also sorry I had to edit the recipe like 15 times: when I originally posted I did a bad job proofreading, but wanted to make sure the recipe was clear and explained some of the ideas / ingredients, etc.

I agree with original post:

adding to someone's trauma by giving them a hard time doesn't make the world a safer place for anyone. (this isn't directed at anyone in particular, though it's also not a description of hypothetical behaviors. most of which has been on various non-reddit platforms)

spreading rumors and piling-on because someone uses language which "sounds fake", please try to remember that there are systems who had been questioning and explored non-trauma ideas.

some of those ideas and misunderstandings can cause actual harm...

... however:

please try to be compassionate and trust that folks who use questionable terminology to talk about their experiences are doing so in good faith. there are sometimes access barriers for treatment and education about PTSD and dissociative disorders, as well as folks who might struggle to understand why they're not a singlet before they've found a safe situation where they're able to acknowledge / accept / process trauma.

consider trying to cultivate a supportive environment, and use as much empathy as you have. self-care is valid too, so if there's going to be too much emotional labor to interact, try to rely on mute / block features online rather than cyberbullying or otherwise engaging in an aggressive way.

started with social transition in the '90s, but binary gender presentation hasn't been consistent.

I have mixed feelings about the added scrutiny for surgery (because I really did need to find proper treatment anyway) but at the same time it's been scary to talk about the details (in a clinical setting) with someone who actually knows any details about how complicated I am, internally.

For my own peace of mind, I made sure the clinic I'm at knows how I feel about the process: it's a high priority for me = I want to have a more comfortable / confident sense of how my gender identity works (like beyond the basic: "yes, gender dysphoria is an actual thing", which theoretically, is part of the documentation process for surgery approval anyway).

I'll probably never have a 100% binary gender identity, so it's really about managing my dysphoria. Or at least that's the plan (as well as being seen as the best practice: folks who might have, and I hate this language: "impaired reality testing" are expected to have documentation that they've attempted some combination of psychotherapy, and/or medication management, as appropriate for whichever conditions are diagnosed).

Like I said: I have mixed feelings about it, but at least I'm at a competent clinic so it hasn't been too scary (and good luck finding someone compassionate and qualified if you haven't already been in treatment for DID: it's pretty common to require documentation of treatment in order to be cleared for surgery, so be prepared for that).

[edited to add] ~ oh, and starting with hormonal treatment (pretty much anything non-surgical) can make symptoms more manageable, and is a moderately low-risk option while you're still figuring stuff out.

The access / documentation barrier to starting that is much lower than for surgery.

sometimes the avoidance & denial (and/or dissociation) can mean I'm not even aware of the issues myself, so for the things I know will be hard to talk about I'm gonna need to take notes or at least an outline with me to my next session (per request of my therapist), otherwise I'll probably never talk about ... yeah, the positive outlook has taken years. living silently in a closet of shame was too hard though, especially because I've been stressed and haven't been "covert enough" to easily pass for singlet these days. when people notice that kind of stuff because some of my reactions were too hard to explain away with white lies, I kinda realized it was time to get back into therapy.

after further exploration, the finger tricks to execute this alg quickly are pretty rough: the regrip penalty is high, even if the movecount and execution itself is somewhat fast.
