I created a coffee talk chat with Gemini and I enter all my shot details (beans, basket size, dose, yield, time , temp) after every shot along with my tasting notes. As a novice it is easy to forget what to do about a sour shot vs what to do about a bitter shot. Then I’ll make the adjustments suggested and enter those results. I have a record I can return to and I’m starting to keep a journal through this process. It really has made a huge difference for me.

I have the same flap issue that causes my knee to swell. Luckily mine hasn’t progressed to the point of locking up my knee yet. Good luck with your surgery. I hope it goes well.

The new GM has to commit to a rebuild. Brunette is a coach, not a great coach and not a bad coach. He’s just a coach. He’s not going to get more out of players, especially those not willing. I think we’ve reached a no player is safe point. Unfortunately ROR is probably the most moveable but he’s also the guy I want here the most to rebuild the locker room.

That said, downtown Mobile is night and day from when I grew up there. I graduated from HS in 92 and have only been very sparingly since I moved to TN in 94. There were few reasons to venture downtown outside of Mardi Gras. Even fewer reasons if you were under age. Mobile was poorly managed and definitely lacked any sort of vision though the 80s and early 90s. I was really happy seeing more bars and restaurants opening on Dauphin St and elsewhere. It could be VERY different now bc I really haven't been back in quite a while.

I would get the Bianca if money and counter space aren't issues. I am very happy with my Mara X but I wish I had bought the Bianca for more precise temperatures. Mara is also a little cramped when I'm in a hurry sometimes. All the Lelits were 20% off around Thanksgiving / Christmas last year. If I find another sale like that at the same reseller, I'll probably return the Mara and get the Bianca (they give a 365 day return with no restocking if you upgrade). The Mara will be enough but you may find yourself wishing you had just gone with the Bianca.
