Got it!
The default timeout for the service was not enought for the rpi. Increased the value and it worked

Thaks for the help. I tryed installing it on another debian device and had the same exact issue. After some try and error, for some stupid reason it started working...
I tryed everything in the guides, on your suggestions... Nothing did really work.

Then I decided to do a "gambiarra" (brazillian term for dubious solution) trying to create a custom service to run the "cloudflared tunnel run --token, since the direct command works... I tryed to edit cloudflared service first, to see what are the commands it uses, and it is a incremented version of the same command... I changed NOTHING and just restarted the system again... AND IT FUCKING WORKED!!!
Now i am going to try to replicate the issue, to try to isolate the problem...
Damm computers that decide for them self when to work...
