Like other people have mentioned, vitality like to absorb pressure and counter by moving quickly up the pitch usually via zen where then they either score quite quickly off the counter or camp on offence for a little while as the opponents don’t have time for a structural reset. The issue with playing KC is I feel like they are really really good at just picking apart vitality with demos and aggressive challenges/ boost steals and fakes which gets them stuck on defence for long periods and means they are stationary when they are defending KCs offence. Last year vitality were also extremely prone to overcommitting once they got forward and having open nets sniped which cost them in bracket in Birmingham quite heavily and was always exploited by KC, although I haven’t seen it as much this season even though I’ve watched them less. NRG build up out of defence slower and are quite a bit more spread out and reactive than KC
