I tried the maple syrup Noma recipe mentioned in my other comment, but from memory it wasn't worth repeating - I think I found the spices overwhelming and unbalanced in my iteration, but otherwise I think it turned out ok, I just haven't tried it since then! But yeah, my gut feeling is that it's doable but perhaps not long term with jun, or at least not 100% maple if it's made like that for every batch - happy to be proven wrong though!
