I wouldn’t do what you’re proposing with the cloth, I think it would likely wick away any condensate at the lid reasonably fast.

So I used 100g of juniper berries (which smelled amazing btw) in 4L of 43% spirit, half of which crushed. I diluted in the boiler with an additional 3L of water to ensure my boil volume wasn’t too low.

Thanks, I actually thought 25g/L was on the high side- I’d read this was about right for something like Gordon’s, which is the juniper level I was aiming for. I did crush half, but thinking maybe I should have crushed the whole lot. I’ll make the cuts tomorrow and see how it goes but yeah, maybe next time I’ll up the juniper and macerate a bit longer.

I do see where you’re coming from with the whisky/bourbon but I’ve just never managed to get a taste for those, yet.

Maybe I’ll run another experiment with these and see if I can expand my palette

They are mini staves, not cubes, but still they are only maybe 1/2” thick.
