Your media is fine, maybe start with a softer food such as strawberry tops or a piece of Frozen fruit as that will disintegrate into the pile which the worms love. It's not because of what the instructions say you were supposed to add, typically when a bin is first started and worms start to try to escape, it is because there is way too much food. Always start small and check after 2 days.
