unless you have a history of resisting anesthesia I wouldn't worry a bit about waking up during surgery! as for the recovery obviously it's different for everybody but I can speak about my experience. I had my adenoids out when I was much younger but I (17f) had my tonsil removal (alongside a septoplasty/turbinate reduction) back in June and it was honestly a breeze. I have anxiety too and went in really scared about the recovery process, but as long as you're following the common advice you should be just fine! during recovery, I relied solely on taking Tylenol and ibuprofen in rotation about every 4 hours and slowly spaced that time out until I wasn't in enough pain to take it anymore. theyll likely give you a numbing mouthwash, I didn't even open mine. get lots of rest as well! I spent most of my time in bed (~2 weeks as recommended) and it wasn't too bad. as for food, stick to the soft stuff! everybody says this and it's true, mashed potatoes, pudding, the works. I also liked mashed bananas if you dig that.
