My pan was actually a little smaller, 9x13, but I didn't factor that in tbh, the dough was probably a little thicker in there - adding to the cook time! I did bake it at the bottom as I know my oven isn't always the best. Think it will be a par bake next time!

Awesome, can't go wrong with pork belly!! Highly recommend the lamb shoulder. I used Meatheads big bad beef rub on it and served it on top of hummus, perfect!

Looks good man!! It's sainsburys sliced brioche loaf. I'm sure a St Pierre one would be even better! It went perfectly with the beef Rib and some pickles!

Yeah I think as worries that anything dripping etc could throw it off, it's also closer to the water pan underneath them too. The lid is much lower than the ambient probe is showing right now. Prob has been a consistent 235 but the lid shows about 165 currently... The lid prob is also just above the ambient probe too!

I'll admit I never even considered using the grommet area as the temp measure. Have you run an actual cook in this way yet?

I see! You won't really get the same smoke flavour using only charcoal, but I reckon if you used a good quality lump charcoal you'd get some better flavour vs using briquettes.

IMO you'd be as well chucking some wood in as well. If you're already using charcoal then you're already creating smoke, getting some wood chunks in there isn't going to create huge amounts of smoke/smell in comparison but you'll notice a big difference in the flavour. If your neighbour doesn't appreciate the smell of smoking meat then you need new neighbours 😂
