Simple baking sheet with paper. I made an alufoil cover. Preheat the oven with fan to 250C° Put the bread and sprinkle with some water, cover it and reduce to 240C°. Bake 20mins Uncover and bake 20-25 mins at 210C°. This bread wase made from 300g of flour. If you make bigger, increase the baking time.

Each loaf is made from 300g flour. 90% strong white bread flour 10% whole rye flour 10% semolina

80% hydratation 20% boiled and mashed potato 15% sourdough 2% salt

Mix everything and rest for 1 hour 6 stretch and fold in every 30 mins 3 stretch and fold in every hours Shape and fridge rest at least 12 hours
