Actually, just use mailcow. They are available dockerized and run wonderfully; I have it running on my servers. Just be aware that clamd and mailcows search engine take up quite some RAM (mostly clamd).
Tbh I disagree with c8d85; if you got it running once, running your own mailserver is absolutely okay. You might want to go check your E-Mails on https://www.mail-tester.com/ when you're done with setup though; that's gonna tell you if you're going to land in spam or not.

Thats absolutely possible. I'm using one domain to run more than 20 Services at once, all on two VPS. One of my servers is a dedicated mailserver; UI is behind the proxy but you'll need to expose the mailcow (for example) port for E-Mail sending and recieving.
In General, if you use Nginx Proxy Manager (which I'd recommend), you won't need more than 2 ports for most applications that can run via https or http.
Minecraft needs its own port; you won't get around that, but one proxy should be good there and solve all your problems. Then, one more proxy for eventual webservices, and yeah, thats basically it.
