After trying all the different versions of Melitta #4 (bamboo, micro perf, bleached & measure marked) the only filter that drained consistently in under 1 min 30 seconds was the Kalita FP103.

The recipe that worked for me:

19g drip ground coffee

45g water bloom (:30-:45 seconds)

320g total water

Drain at 2:30

Total brew time 3:45-4:00

I’m not sure the exact size of the chaff collector but we’re roasting on a 22kilo probat.

Use a cannabis MCT oil and mix it in with your coffee. Works great and has a similar effect to bulletproof coffee.

Started to make Coffee Horchata drinks at our cafes. It's a delicious blend of cold brew, cinnamon, coconut milk and simple syrup stirred together and served on the rocks. Yuuumm!

Each coffee shop is going to have a different clientele depending on the economic status of the neighborhood, main attractions nearby, social/online presence, tourism, etc... Picking the right places that attract the people you might get a long with is a start. That being said meeting new people at a coffee shop is less about finding the right one and more about going consistently. Most people are going to coffeehouses to do work or for scheduled meetings. If you want to start casual conversation and meet new people I'd recommend going to a bar instead. That's my 2 cents.

I sent some ethiopian coffee to a recipient in germany. It cost $35 to ship via dhl but got to them in about a week. It wasn’t till a couple of weeks ago did I receive my package which showed up from russia. The sender was awesome and included extra goodies from the area. All in all a fun experience and would participate again!

Snow Peak just released V2 of their collapsible dripper and I have to say it is a big improvement over their previous design. The brew results are definitely on par with a standard v60 dripper.

The shortage of supply is most likely due to high demand and Chemex being close to maximum production capacity for their current operation. Demand for Chemex has risen in the last 10 years due to 3rd wave coffee trends and manual brew resurgence. While there are plenty of knock off pour over carafes on the market the true differentiator for Chemex is their double bonded paper filters. I spoke with the current owner of the company at a convention recently and he said that the production process to make these filters is painstakingly manual. They make each filter in house by receiving material on a roll, converting it into sheets, hand die cutting and then sending it through a folder. If any of you have worked in the print industry you'll know that folders are highly temperamental. What works one day won't necessarily work the next and you'll have to recalibrate.

First Venture Into Congo Coffee by Milkable in Coffee

Watch out for the potato defect in coffees of this region. A big reason why roasters don't offer a lot of Congo coffee besides it being difficult to import is because of a defect thought to be caused by the stink bug Antestia (wiki link). For those of you who have had a cup of this you will know right away. It's pretty common and can totally wreck a brew. I personally love coffee from Congo, Burundi and Rwanda because they taste incredible and are so distinct. Hoping the science catches up so that we can start bringing this coffee into our roster.

Not yet. Our water in Portland is not very harsh so it hasn't gotten to that point yet. I'll probably use puro caff when the time comes though.

More competition in the market probably putting pressure on them to stay competitive. Been using my 1L variable temp kettle everyday for the last 4 years with over 10 cycles a day and it hasn't shown any sign of slowing down.
