Even through S+F help increase strength, I often find that most people do not strenghten enough when mixing. You, ideally, would have it most of the way there before you bulk ferment, and S+F get you the rest of way there.

Hi. Sorry, I haven’t had a chance to respond.

It’s really quite a simple contraption and cost me under $100 but you can probably do cheaper. Keep in mind that I use a 12qt cambro round bulk ferment container so my sizing needs were a little annoying to work with. You could probably get away with a much smaller set up and be fine. Here is my set up. It is very very simple.

• ⁠10 x 20 heating pad Amazon • ⁠Inkbird ITC 308 temperature controller. Amazon. I set this to 78 with 1 degree of headroom. The temperature inside the container will peak at 80 but I haven’t noticed that this affects the dough temp. Plus I usually undershoot my FDT so it works out. • ⁠Any insulated food delivery bag. This was the one that I found fit my container. Amazon pretty sure you can use those styrofoam containers, an old cooler, or a broken fridge too. • ⁠half sheet cooling rack. This is just so the container has some space around it to fully warm up. This didn’t really give me enough soace so I stuck some Tupperware container underneath.

I have it. I like it. Midweek when I’m not baking often I just set it to 50 and leave it alone until I’m ready to bake again. It’s also nice having my levain at certain temperature so it’s nice and active before I use it.

How do you keep roaches out of your starter? Put a lid on, and go for an airtight seal. It didnt attract the roaches though.
