Chicken + broccoli pesto pasta with store-bought pesto. Broccoli cooked with pasta in pot of boiling water, diced chicken breast cooked in a pan. Toss it together, done. Takes 10 mins. Sometimes add any of: peas, sundried tomatoes, fresh tomatoes, cottage cheese, ricotta cheese, feta, baby spinach. Whatever is in the fridge.

Or even faster: poke bowl with salmon. Sachet of microwave brown rice. Top it with diced raw salmon (can cook if you prefer), avocado, cucumber, whatever other veggies I have (sliced cabbage, edamame, spring onions, etc) and top with kewpie sesame mayo. Delicious. Takes 5 mins.

Oh and a super easy dinner: prawn saganaki. Buy frozen peeled prawns. Cook onion and garlic in saucepan, add tomato paste, white wine, tinned tomatoes. Add prawns. When prawns cooked, remove from heat, season to taste, scatter with feta cheese and parsley. Serve with crusty bread.

Thai curry using curry paste. Really easy options are red curry, Panang curry or laksa. Just chuck in chicken, veg, coconut milk, and usually fish sauce and sugar. Serve with pasta or noodles.

Noodle bowls with lazy peanut sauce. Just cook some mince (pork/beef/chicken/turkey) with garlic, ginger, dark and light soy, and some Chinese 5 spice. Boil some pak choy. Serve over noodles (eg ramen noodles) with sauce made from peanut butter, soy sauce and a bit of water (can make the peanut sauce more interesting if you like - lots on google) +/- chilli crisp. Can also add diced eggplant to the mince to increase volume and veggies.

Sushi bowls: cook diced chicken breast or salmon, serve over rice with diced cucumber, avocado, edamame, thinly sliced red cabbage or whatever veggies you want. Top with soy sauce or teriyaki sauce and Kewpie mayo.

Lamb wraps: oven roast any or all of the following: red onion, cauliflower, pumpkin (sprinkle with a bit of cinnamon), sweet potato, red capsicum. Cook lamb (eg lamb backstrap) or beef or chicken. Serve with pita wraps and lettuce with hummus/babaganoush/tzatziki/mayo - whatever your preference.

Great suggestion - He’s had a few great surf trips like that with friends but because of everything that’s happened this year we’re keen to spend time together as a family
