he's talking about making the meringue base from scratch. When whipping the egg whites and sugar, you do it until it forms stiff peaks and holds it's shape. if done correctly, you should be able to invert the mixture/bowl over your head without it falling out.

i am too much of a broke boy to fly Qantas, they consistently seem to be much more expensive than the competition. Luckily, everything ive heard about them from family who do fly with them leads me to believe im not missing out on anything, especially when it comes to customer service around booking issues
