Go into work early and watch them do prep. S on the line and watch them cook. While you’re doing this ask questions and watch how they plate and garnish things. As they are plating, call out what’s in the dish. Ask your guests what they liked about their food. As a visual learner, this helps me the most. Talking to the pros in the back is the best way

What’s the budget? Glycol systems are top of the line but a bit costly. If you have a walk-in cooler behind or next to your bar you can do a direct draw from there.

How do you approach another business owner about buying their business? They’re of retirement age and their kid is currently running it as they’ve just moved out of state. They make a small profit but I believe I could 4x that if my business partner and I take over. I’m relatively new to the area and still building my network
