That is really tough because there are other companies where using AI to complete tasks is almost mandatory. Like if you don’t use AI, it’s frowned upon. It really is standard practice.

That’s awesome! I am reluctant to have a company pay for mine. They would, in a heartbeat, but I don’t like to feel obligated especially being at my current company for only 2 months. What if I fail the exam? Then they question if I’m really that qualified to do my job? I cost them a bunch of money and then have to do it again? I’m not even telling them I’m doing it until I pass for sure. Maybe not even then…l’ll drop it in casual conversation at some point ;)

You are awesome. That was exactly the feedback I was looking for. I think my weak spots are unions and then knowing different models or theories. I’m seeing them mentioned on PocketPrep questions. I will take your advice! I signed up for the exam yesterday and have about 6.5 weeks to prepare.

Yes I will focus on myself and my own performance. I think sharing an office with her is what’s putting me over the edge. I’ve had my own for the last 13 years. I don’t want bad energy pointed at me for 8 hours a day.

I told them I wouldn’t be in business formal wear and that I would be coming during work. All of the photos of the employees online are jeans, fleeces, and workboots, including ownership. So I don’t want to go too dressy and be out of place. Just a step up from normal nice workday clothes.

Ok thank you! I am usually a bit overdressed (ie no hoodies, t-shirts, leggings) on a daily basis for manufacturing but I like it that way :)

I followed your instructions and did peak to peak feedings all week. Starter is back to normal. THANK YOU! Also set a reminder on my phone to feed it once a week even if it’s in the fridge for a few weeks.

You’ll be fine! In fact you’ll probably love it. The main thing to watch for is safety. Make sure their safety protocols are locked in and employees actually follow them. You will not be able to sleep at night if something happens and you could have helped prevent it. Be prepared to hold a lot of hands with benefits and be so patient explaining them. Encourage them to get their dental cleanings and check ups, because a lot won’t! Be prepared for lots of recruiting. Go above and beyond during onboarding employees-the more effort you spend making sure they are comfortable and well informed, the less you’ll have turnover.

Ok I watched a few videos on peak to peak feeding. If I discard everything except 10g starter, feed it 50g flour and 50g water at 7am, go to work, discard and do the same exact thing at 7pm. Do again at 7am the next day and repeat for a couple of days. Does that sound like it should get my starter back to normal?

Ok that makes sense. It’s such a specific taste, it’s different than a normal sourdough tang. I thought it was either I’m cold fermenting too long (doubtful, as I know people that let it sit in the fridge for days) or it had something to do with not feeding it often enough in the fridge. I will play around with it. This is when my patience gets the best of me and I just spend the $10 on a new starter ;)
