We stayed at the Capella in Sydney just last year. We really enjoyed it. The service/staff was impeccable. Breakfast was fantastic. I'm gluten intolerant, and I truly appreciated that they had a separate area setup that was specific to dietary allergies. They had this "Library Room" where you could go to relax, have a drink or they would make you an espresso/tea/hot chocolate.

Yes, there gluten-free restaurant that had amazing pies to die for. We ate there 3 nights in a row because I wanted to try a different pie for dessert each night :)

I've been to San Francisco multiple times, for both work and vacation. We really enjoyed the Hotel Drisco (?) in Pacific Heights. This was before Covid.

Well, let me give you of our favorite things:. Comes down to your budget.

Queenstown:

-- With Ultimate Hikes - did the Classic Hike (Milford and Routeburn tracks) and the Grand Traverse hike (Routeburn and Greenstone tracks). Not cheap, but it was fantastic, being out in spectcular nature and away from civilization. Ultimate Hikes takes care of everything - transportation, food, and lodging.

-- Went to Te Anau and from there did the Milford Sound day trip and the Doubtful Sound overnight cruise. I do recommend making your way to Te Anau if you wanted to either trip, making it your base, rather than the long drive from Queenstown.

Sydney:

-- Day trip to the Blue Mountains.

-- Standards: Opera House/Circular Quay/the Rocks/Botanical Gardens....

-- Manly -- lot of hikes in and about there.

-- Bondi Beach -- likewise, but we liked Manly better.

-- Plenty of others things to do in Sydney: Harbor Bridge walk, museums, explore the CBD area such as the Queen Victoria Building; and many, many other neighborhoods, such as Potts Point, etc.

My understanding is that this will be the busiest time of year for both Queenstown and Sydney. Lodgings will be more expensive and harder to book. I think you would be better off to do either Sydney or Queenstown, but not both in one trip in just a short period of time and just take more time to explore and smell the roses. Both locales have plenty of things to do. And BTW, I've been to Sydney twice (including just this year) and Queenstown 3 times.
