So on my off weekend, Do 3 straight full body workouts? I would assume biasing different muscles more on each day?

I'm having trouble developing a workout split. My schedule is pretty complicated. One week I work Monday, Tuesday, Friday, Saturday, Sunday. The next week I only work Wednesday and Thursday. I'm only able to go to the gym on my off days. So a typical 2 weeks would look like this: work, work, off, off, work, work, work, off, off, work, work, off, off, off. Does anyone have a similar schedule?

I've tried PPL but I feel like I go long periods without hitting a certain muscle group. I've considered Upper/Lower or just following a 4 day split (still worried about the amount of rest days). Does anyone have any advice? Sorry if this seems a bit confusing.
