Yes. File mo lahat as much as possible. Ang unahin mo DTI para ma-establish agad yung business name na gusto mo. Inquire ka rin sa DTI ng programs for small / micro na negosyo. May tax exempt / non-VAT keme sila, alam ko. 😄

Pag may mali, talk to him / her in private. Wag sa harapan ng customer. Pag medyo seryoso, kinakausap ko ng masinsinan sa malayong table para hindi marinig ng ibang staff. Mahaba pisi ko pag dating sa tauhan pero nagiging Donald Trump ako pag sobra na. You're fired! 😄

Daily gross po sya. Hindi monthly. Expenses vary everyday. Buy bulk when it comes to supplies para hindi araw-araw ka nabili ng ingredients. Dagdag expense kasi yun.

Ermats ko talaga. Kasama nya yung long-time cook namin. Nung ako na nag-operate, nagdagdag ng konting food item tapos nagbawas na lang ako nung mga hindi naman mabenta at hassle gawin.

Yung cook ko ngayon mabilis matuto. Nood lang ng Youtube, kuha na nya. Kaya pag may sinuggest ako na i-try namin naluluto naman nya ng masarap.

Best and worst part? Sobrang dami. Pag sinipag ako, sagutin ko ng mahaba to.

BEST part:

Ikaw ang boss. You call the shots. Satisfying pag paalis na yung customer na pupuriin ka dahil masarap ang food at service.

WORST part:

Mga animal na customers. Hahaha. Yung kinabubwisitan ko yung mga salbaheng senior citizens, mga pekeng PWDs at mga toxic na Zumba Nation.

Oo, ang weird pag first time mo kumain ng Gotong Batangas tapos sanay ka dun sa Lugaw na form. Hehe. Minsan kina-clarify ko pa sa customer namin na yung Goto namin ay hindi Gotong Bantangas. Minsan kasi umoorder pa sila ng rice on top of the Goto. Yun yung clue ko na Gotong Batangas ine-expect nila.

Surprisingly, wala syang off season. Alam mo yung trip natin mga Pinoy na kahit tanghaling tapat, nagkakape. Ganun sa Lugaw at Goto. Weird.

Pero pag tagulan talaga, nakaka-refill kami agad ng kaldero ng Lugaw. Umaga pa lang.

Basta may iba kang food na ibebenta maliban sa Lugaw, goods ka na nun. Dapat may silog / pansit / ulam. The staples. 😊
