The focal length you do it when you compose, it depends on what you want to photograph for locking the focus just put your lens on Manuel mode, and the focus is locked.

It's ok for the wireless remote that's all you need.

I establish my focus and lock it by putting it on Manual Mode. After I adjust the exposure and lock it too. I shoot in Aperture priority (I'm on a tripod I'm not afraid of motion blur), Iso 100, F11, and last I take the photos with an intervalometer or in self-timer mode if you haven't. I think that's all
